| Abstract: | The objective of this thesis was to investigate the expression of cocoa nibs and a way to optimise the cocoa butter yield (defined as the mass of cocoa butter recovered as a percentage of the total cocoa butter content) obtainable from cocoa nibs without modifying the composition of the cocoa butter. |
